Its under the "Arduino->My Hardware-> open arduino setup tool" section. When you scroll down to the "WS2812B RGB 8x8 matrix" and enable it one of the options is for the serpentine matrix layout(and reverse). I can confirm my 8x8 was doing what yours did and I reloaded the sketch to my arduino and that resolved it using latest build as well.
